Lunch Meal Planning, Delicious Lunch Idea & Recipe Link

I almost always plan my dinners for the week ahead. It makes it so much easier to grocery shop, and to keep from eating out when we already know what the plan is. 

This week, I took my meal planning one step further than I usually do, and planned out my lunches for the week. Lunchtime is the most challenging meal for me. I never know what to make, and end up overeating, eating something junky, or just kind of grazing a little bit. I'm hoping this will help me feel less "lost" at lunchtime everyday. I'm trying to keep my meals pretty "clean" too, and organic when I can.

Day one of a planned lunch was great! I made a Clean Eating Quinoa Avocado Salad that was to die for. SO GOOD! I used a recipe from The Gracious Pantry (which is one of my new favorite blogs), with just a few tiny tweaks. I didn't have any limes, so I used lemon. And I inadvertently used too much garlic powder. But, it was one of the best things to hit my palate in quite a while, really. It was simply bursting with flavor.


 
 This recipe is a "clean recipe", so it's dairy free, and it also happens to be gluten free. Perfect! The whole thing took less than 20 minutes to prepare. I highly recommend it! So, go ahead and head over to The Gracious Pantry for the full recipe!

Long Lost Blogger

Hello Blogosphere! I'm here, for reals, it's really me.
Remember me? I used to post 3-6 times a week and then I sort went off the grid.
Here's what happened to me. (Sort of, but on a substantially smaller scale).
In any case, I can recall the moment that the magic started to fizzle out for me. And from there, it went fast. So I decided to step back over the holidays to enjoy time with my family. And then, for the most part, I didn't miss blogging. I did a little bit at first, but that didn't last long. It wasn't long before this little blog of mine was kind of just a memory.
Fast forward a few months, and I think I'm ready to ease back into it. But differently. I'm just going to go where my creative juices lead me. I wont be "trying" for anything aside from a personal creative outlet.

A quick note

I've been MIA from the 'Blogosphere' for a little while now. 
Today I went into my Google dashboard and discover that Google is getting rid of Google Reader in July.
This is a bummer for me, as it's how I follow/read my favorite blogs, and it's how many of my readers follow my blog.
If you are following me via Google Friend Connect, may I please ask you to follow me here at Bloglovin'?

I went into my Bloglovin' account and found that it was VERY easy to import all of the blogs that I'm following via GFC to my Bloglovin' account, so now I can still follow along with all of my favorite bloggers! Give it a try sometime soon, before you lose all of your favorites :)

Tomorrow is Dr. Seuss's Birthday!! Check out how we celebrate.

March 2nd is Dr. Seuss's birthday! Dr. Seuss has always been a man that I admire for his fun writing and humor. How could anyone not admire a man that created so much inspiration in children and instilled a love of reading in them?
Dr. Seuss's birthday is also recognized as Read Across America Day. Many elementary schools participate in this as a week long event. It's so much fun for the kids, and again, it really reinforces the importance of reading for pleasure.
While I'm still deciding what to do tomorrow, here is how we celebrated last year:
I started the day by making Green Eggs and Ham for my kiddos.

My boys spent the afternoon at their grandmother's house, so I became inspired and decided to surprise them by  throwing a mini birthday party for Dr. Seuss!!
While they were gone, I got busy making our celebration dinner (as colorful as I could, just like a Dr. Seuss book!) and cupcakes. I printed out Seuss games, coloring pages and activities.
When they got home, we read Seuss books and watched Horton Hears a Who. Then we had our little birthday party. Here is what we ended up with.

Lost Dog/Found Dog, A Winner, An Inauguration, & MLK Day.

Good morning friends! Oh my! I have so much to share this morning. So who's in the mood for a completely random blog post?
Ok, first of all, last Wednesday, my little dog bolted out of the house to go chase a cat.
He. Is. Fast. (There's a reason why we named him Flash.)
He ran around the yard for hours chasing stray cats and barking at them. I could never catch him. Then I didn't hear him barking anymore. He didn't come that night. To say I was concerned is an understatement. Unfortunately, the next morning my Little Lady had an orthopedic Dr. appt in Los Angeles and we had to leave very early in the morning to get there on time. I could not look for my dog, or really do anything.
I just kept hoping he'd be there waiting when we got home. He wasn't.
The next day I went to the animal shelter looking for him, talked to neighbors, made signs, called all the local shelters, posted on local Facebook pages, searched petharbor.com, and posted on Craigslist in hopes of finding him.
 The weekend passed. No dog. My heart was so sad.
Then, just this morning, The Hubs woke me up (at 4:45am) as he was leaving for work and says "I found Flash!".  A happy reunion!!!
The little stinker was under the hood of one of my husbands old cars. Literally laying on top of the engine. It's so hard to believe that he was there for 4 days and didn't bark for us or anything. What the heck? Maybe he went out roamed around for a while before coming home and climbing up there? So hard to believe, but I'm just so glad he's home! He was tired, hungry, thirsty, scared and stinky. But he's home safe now where he belongs. He's been snuggled on my lap all morning.

And finally, today is Martin Luther King Jr. day. A day that we celebrate a man who helped shape and change this country. A man who is due a great deal of respect and admiration.

The Shoes I'm Walking In

I didn't write this, I don't know who did. But it does encompass the journey that I am on. That many are on. If you're not wearing these shoes, I urge you to continue reading, because although I didn't write this, it is a piece of my heart:
I am wearing a pair of shoes. They aren't pretty shoes… uncomfortable shoes. Each day I wear them. Each day I wish they'd feel more comfortable. Some days my shoes hurt so badly that I do not think I can take another step. Yet, I continue to wear them and continue my journey....I get funny looks wearing these shoes. I can tell in others eyes that they are glad these are my shoes and not theirs. They never talk about my shoes.... To learn how painful my shoes are might make them uncomfortable. To truly understand these shoes one must walk in them. But, once you put them on, you can never take them off.

...I now realize that I am not the only one who wears these shoes. There are many pairs in this world. Some women ache daily as they try and walk in them. Some have learned how to walk in them so they don't hurt quite as much. Some have worn the shoes so long that days will go by before they think about how much they hurt. No Mom deserves to wear these shoes. Yet, because of these shoes I am a stronger woman. These shoes have given me the strength to face anything. They have made me who I am. I am a Mom who has a child with special needs. I will forever walk in these shoes. ~Unknown
Although the shoes can make me wary, and bring me pain. I have come to love them. I'd never trade them. To me, these shoes are a beautiful blessing.

One Word for 2013

Happy New Year!!
If you had one word to describe what you want from the new year, what would it be? Sort of like a "theme" for the year. Health? Wealth? Joy? Peace? Serenity? Grace?
I'll bet that you can guess mine.

Kindness

My goal for 2013 is to be deliberately more kind EVERY DAY. To spread that kindness everywhere that I go, and to inspire more kindness among those around me.

This year is a fresh start, a blank slate. We can make it what we want to. Make it great!

December Kindness Challenge Wrap Up

 As we wrap up this month, I feel inspired within myself. Inspired to take this warm fuzzy feeling of love and generosity from the December Kindness Challenge, and to carry it on in a very deliberate way throughout 2013.
I always strive to be a kind, compassionate human being, but sometimes that can get lost in the shuffle of daily life and occupied minds. For example, I would never hesitate somebody who was in obvious need of assistance, but it's less common that I would seek out a way to extend kindness to somebody. And it feels really nice to do that.
So, for the next year, let's join the movement of kindness. Spread the love, spread the joy, the cheer, the goodwill. Go out of your way to be helpful, understanding, and empathetic to those around you. I will be, and I know that it will be worth it!

After today, there are still a few more days left of the December Kindness Challenge, but this will be the final link up/post in the series. Just remember to keep up your acts of kindness for the month!

Here were my kind acts for the last week:

12/21: At Bass Pro Shop to see Santa, I was able to join my friend and her kids on her "Bass Pass", so I passed mine on to somebody in  the standby line. Then later that afternoon, I went to the Starbucks drive-thru and paid for the person behind me in line.

12/22: Left some homemade Peppermint Bark cake pops on my neighbors gate with a Christmas card.
12/23: Made a small donation at the grocery store's Harvesting Hope collection container.

12/24: After our Christmas celebration with my husbands family, I had one of the photos of my in-laws and the grand kids developed at Walgreens, and then framed it so that my In-Laws would have a copy right away.

12/25: While at Walgreens buying batteries, I helped a man find the appropriate SD card for the tablet he bought his kiddos. He was so upset with himself for not buying one in advance.

12/26: Picked up dinner for my family because The Hubs and I both didn't feel like cooking. We had post-Christmas fatigue. Then I brought The Hubs his drinks without him asking me to.

12/27: Created a GoFundMe account (and donated) for some good friends of mine to help them with their expenses on getting to the Arthrogryposis Multiplex Congenita Support, Inc. conference this summer. They will be traveling with their special needs daughter (same condition that my daughter has) and all of her medical supplies and adaptive equipment, and it will be challenging and expensive for them to make this trip.

I have some more acts in mind for the next few days of this challenge. For example, I want to bring flowers to the nurse that helps with all of my daughters referrals and stuff down at the medical office. I want to go drop off our pop tabs at the nearby Ronald McDonald House. I want to bring a plate of cookies to the police department. So those are things I'll get to over the next few days. And then I'll be on the lookout to make 2013 my kindest year ever! Join me, wont you?

A few {not so} glamorous words

I hope that you all had a wonderful Christmas (if you celebrate it). My family and I had a wonderful few days of love and celebration.
The last few weeks have been full of festivities and prep and all of the wonderful things that the season brings, and in turn, I have been blogging a little less than my typical routine. I have missed some of the regular parts of my blog, but not as much as I would have expected.... I love my blog. I love that it is something that is "just for me"... it's not for my kids, or my husband, or an obligation I have. And I do get excited when I get new readers/followers, or a post that gets an exceptional amount of page views... because that means people like what they see. How flattering!
I never expect to become a "big blogger", so I kind of go back and forth on what I want to do here... Any blogger can tell you that it's a numbers game. How many page views, how many views per post, how many followers, how many comments, and shares and pins. It can cause high's of excitement and lows of disappointment. I don't want my hobby to ever disappoint me, yet sometimes, it does. (comparatively though, I guess a lot of hobbies can cause disappointment... sports comes to mind.)
An example of me feeling let down is when your number of followers goes down. No blogger wants to lose followers. I've lost a handful of followers over the last few weeks, and I try to tell myself that it's not that my content is poor, but perhaps some of the people that only followed due to a giveaway and then unfollowed later. Sad, but I know that people do that.
I was also hoping to see more response in the blogger community to my December Kindness Challenge. I'm surprised to not have seen more people getting involved. So then it makes me feel like I'm not "in with the cool kids". It's no secret that the blogging community has cliques.
In any case, I'm just rambling here. I'll just keep blogging as my creative outlet, and hope for more fun than discouragement with it.

A Christmas Eve activity for excited kiddos!

If your kiddos are anything like mine, they are super wound up and crazy very excited on Christmas Eve. So much to look forward to, and so hard to wait!
To help your littles deal with the anticipation, it's a good idea to have a few fun activities lined up. Enter the Peppermint Whipped Cream Painting.
If you don't mind a little mess (we don't!) then this is a great sensory activity to do with your children.
I took some of the "whipped topping" that we had still in the freezer from Thanksgiving, added a few drops of peppermint extract to it, and then colored it red and green. The kids had a blast! Their sense of smell is stimulated with the peppermint, their hands are covered in creamy, smooth "paint", and their visual senses are taking in the lovely artwork. And technically, the sense of taste could be stimulated as well with this fun project! Our artwork even continued to smell after it dried.

Week two recap of Dressember

Here is my photo collage of Week 2 of Dressember. I'm linking it up over at ModaMama!
Over the week I wore a variety of dresses. A different one each day. The 9th and 10th were repeats of last week, but worn differently. Today (not shown) I am wearing one of my last dresses before I have to start going through repeats. I will try to change them up a bit though to make them look different.
I'm having so much fun  with this challenge. I think I'll start wearing dresses more frequently, after Dressember is over!

Dressember Week One Recap

Hey, remember last week, when I shared with you that I was participating in Dressember? Well, I'm happy to say that I made it through the first week with no problems! My sister got on board with it too, so we've been having a blast!
I really want to go pick up some colored/patterned tights and leggings, but for now I'm making do with what I have. I think I see a trip to Target in my future though...

A Christmas Tradition That I Love

This morning I sent out the invitations for my 4th Annual Gingerbread Party. This is an event that I started in 2009 where the women and children of the family come together to have a fun and festive afternoon of gingerbread decorating and a warm lunch of creamy potato soup and french bread. (I mean, men could come too, if they wanted. But they're all at work.)
The Gingerbread Party is one of my favorite events leading up to Christmas. It's so fun, and so full of cheer.

Over the years, we've had several new additions to the family, and many variations of gingerbread. We've seen houses, men, trees, trains.
We usually oooohhhh and ahhhh at each others creations.
And sometimes laugh at them.
But we always have a wonderful time. It fills my heart with joy.

I think we found our Christmas Card

Yesterday we did a little photo shoot here at home. It was fun, and silly, and all 3 kids cooperated. I've seen similar ideas on other blogs, on Pinterest, and floating around the internet. For instance, I saw one where it looked like the little tot had wrapped his parents up in the lights. And I saw one where it was just two boys. But clearly, I needed to incorporate all 3 of my Littles into the photo. Here is my favorite from the batch so far:

Home Tour: #3 in a Multi Part Series (Kids Bathroom)

Hello friends, it's time for another post in my "Home Tour" series! If you have been following me for a while, you might remember the first two posts in this series. If you're a new follower, or you missed the first two, you can see my living room here and my kitchen here.
Welcome to my {not so} glamorous home! Today I'm going to share with you what I call my "middle bathroom". This is actually the main bathroom, and the one that the kids and guests use. I have a love/hate relationship with this room. It's old and outdated, there are so many things I'd change about it. But I recently did a bit of sprucing up to it, and I am liking it a lot more right now than I did a few months ago. I took out the green/brown decor I had in there (that just made it look more outdated) and replaced it with colorful, modern decor.

These first 3 photos are the view you have entering the room from the hallway.
 




These last 3 photos are the remaining views of the room. I didn't give much focus to the bath/shower because it's just a regular old tub with ugly gold colored trim.



My fave things about this room are the colorful accents... the rugs, the towels, the curtain, the cute wall art (the wall art was compliments of the free printables from Over The Big Moon). I like the tile floor too. My least favorite things... all of the gold (trim on shower doors, faucet), the 70's style counters, the huge counter with only one sink, and the huge mirror with no molding. I take the good with the bad in hopes of gutting that room someday and making it gorgeous.

90 Day Challenge Update

Hello friends! How many of you are "back to the grind" today after a full week off? We are over here, and so far, it's going better than I had anticipated it would. Maybe the kids were sick of being home?
Last week I weighed myself on Wednesday (before Thanksgiving!) and was down a total of 6lbs on my Body by Vi 90 Day Challenge. That was only 2 1/2 weeks into it, so I was pretty happy with my results!
Then, this happened:
That photo shows only a small portion of what our Thanksgiving feast included. And it didn't stop there. I gave myself a little bit too much freedom over the 4 day weekend when it came to eating. And by day 3, I was feeling it. I probably gained back 3 pounds, but the battery in my scale died, so I have no official weight update. That's probably for the better.
So after that food-filled weekend, I was actually looking very forward to having my Visalus shake for breakfast this morning, and have my walk planned here in a little bit. Back on track today!

Happy Hump Day AND Thanksgiving (a day early, because I will not be on the computer tomorrow!)
Today is a very special edition of WILW. Why? Because I said so. Oh, and because it's a Thanksgiving edition too... that's special.

What I love this week:
